I've been wondering just how secure these ordering sites really are? When I've ordered anything via, for example CCbill, they seem secure enough - but can this, or other sites, be hijacked by criminal organisations?

No such thing as being 100% secure on any sites or for that matter any large highstreet firms who have your credit card details - rogue employees are everywhere.
Best thing to do is use a debit card and keep a small amount in it. If you use a credit card you are covered for any mishaps like people stealing money from your account .... just depends if you can easily explain to your credit card company what sites you have been frequenting.

PEOPLE think Stephen Hawking is so clever, but when you ask him a question and he is typing in the answer on his little screen, how do we know he isn't just looking up the answer on the Internet?

Many online companies don't accept debit cards for transactions.
I understand that CCbill claim to be the most secure?

Google any billing company and you'll find a litany of bad stories
mainly down to the customers ignorance but a few the other way
I've used most of them and got scammed once via one of the biggest ccbill.com.I just simply had my bank return their charge and have been black banned ever since

Hackers have broken into Credit card company servers and stolen thousands of active credit card numbers on several occasions which proves no such thing as totally secure

These sites are supposed to be encrpyted to prevent hacking?

Happens with all sites but you'll not hear of many instances unless things like credit card/account numbers are stolen
Sure banks & credit card companies have higher levels of encryption and security around their servers but PCs were never designed to be used for
financial transactions.The creators have said as much

I had to claim a charge back for a site, which when i signed up for a 1 off 1 week access, kept rebilling me via netbanx.
My bank asked me what the site was, so i said 'its filth, well actually it wasnt filth thats why I only took a week and they keep billing me'.
