Although it's been some years since I did filming, it really takes so long because you cannot shoot the damn thing again. I used to make them pre digital camera, and I was the only camera, so I had to cover all the shots myself; long, wide & close-up (smile).
There are the inevitable breaks whilst you move lighting, think up new things to do, and to catch your breath. Models (and cameramen) do not run on empty, so a meal break is in order.
I believe that for every hour I shot, that would give me perhaps 10 minutes worth of footage, which could take twice that long to edit.
A lot ends up as worthless, perhaps not because it's crap but you cannot fit it in with what the final edit will be.
I shot something a few months ago, and did it in the camera (digital), I worked out the shots in my head, did it gonzo and got it to 50 minutes dead on, editing would have helped a little but it's good to watch nonetheless.
