Starbucks or kebabs?

I recently bought 'Corruption' and, 'Now That's What I Call Porn.' Why? Two words: Lorna Lace. I saw her on Real Couples and thought it was an incredible performance. Inevitably, however, the two dvds I bought on the strength of that are, quite simply, shite. Aside from the poor camera work, she's no actress, and yet for Real Couples she was so, ermm...real. The same thing goes with Wendy Taylor, in my opinion. Infamous performance for Ben Dover. Nothing else has come close. British girls tend to be more naturalistic than their American counterparts, but why is being yourself so difficult?
In my experience all porn is very hit and miss, which can be bloody irritating. Line up the same performers in two different productions and chances are you'll get very different results in terms of performance quality. Which is bewildering, given there's no plot or script or narrative, bar the number and nature of acronymed acts that are required: BJ, DP, CIM, GSOH, VC, OHMS.
Question is, would porn be better if it were Starbucks - reliable, well-packaged, you know what you'll get every time, or is it better as a kebab shop - content and quality completely random and often half-cooked?
