What IS that all about? Today in a shop Iv,e never been in before and after purchasing some stuff, the girl said " thanks see ya later" No she fucking wont! she,ll never see me again, I have noticed everyone say,s this....wtf.

It is a common courtesy. It implies that they look forward to seeing you again. And someone must have said it to you at some time, Lizard, and meant it.
