I think you will find that it's not Clarkson nor Hammond that throw the Ferraris etc round the track, When you see the cars going sideways, you never get to see the driver. The shots of Clarkson are all from inside the car whilst driving slowly, talking to the camera.
My guess is that the proper, hairy driving is done by the Stig, and Clarkson drives them like your granny. If I were Ferrari, Lambo, Bugatti etc I wouldn't let Clarkson anywhere near the wheel of my ?1M motor (neither would the insurance guys).
