You could do what I do with the guys at Doll Theatre.
Do a dry run of the scene (stills only) upto before the cum shot, then shoot the scene on video then still the ending after the money shot - then you have a complete set.
Or if you scene has angles and you take break to change view, still the scene at that point during those breaks, that works OK to.

Hey, everyone beat me to helping you :) lol

Just a thought though, if you plan to make DVD's then leaving the footage interlaced will actually give you smoother movement. Footage sometimes looks how you describe as you edit depending on what editing software you use.

Rather then de-interlacing it on the time line as you edit it might be easier to do that when it comes to compressing it for the web, that way you have a master copy that would look good on DVD too.
